The Mister out does himself on the grill again. Grilled pizza. Yum!


Discovered this recipe via Pinterest. It is from The Bitten Word. We just used yellow squash -- it was all we had on hand. It was delish! We see SO many possibilities with this dish. Can't wait to try it with the zucchini and prosciutto!

GRILLED SQUASH RIBBONS
adapted from The Bitten Word

1 teaspoon finely grated lime zest
1/4 cup fresh lime juice
1 garlic clove, crushed
1/4 cup extra-virgin olive oil, plus more for brushing
Salt and freshly ground pepper
1 large yellow squash, very thinly sliced lengthwise on a mandoline (i used a vegetable peeler)

Light a grill.
In a small bowl, combine the lime zest and juice with the garlic and the 1/4 cup of olive oil. Season with salt and pepper.
Thread the yellow squash 2 pairs of 12-inch bamboo skewers.
Lightly brush the squash with olive oil and season generously with salt and pepper.
Grill the skewers over high heat until the yellow squash is lightly charred, about 3 minutes per side.
Serve with the lime dressing on the side.

Serves two.

The Poppies are blooming! This Spring we established a new garden on the side of the house. We sowed some Poppies and Lupine. You can read about it here. The poppies have been blooming for the past few weeks. They are beautiful and there are many more blooms to come. The Lupine has yet to bloom and its not looking promising. We'll wait and see if they come in before the end of the summer.
